This recipe is for 1 quart. Double it for 2-quart ice cream makers.
1-1/2 cups heavy Cream
1/2 cup milk
3/4 cup sugar
1-1/2 T. cornstarch
1/8 tsp. salt
1-1/4 cups coconut milk
1 cup shredded sweetened coconut
1/4 cup Captain Morgan's rum
- Whisk together cream, milk, sugar, cornstarch, and salt in a 3-quart heavy saucepan. Bring to a boil, whisking to prevent scorching. Boil for 2 minutes until thick.
- Remove from heat and whisk in remaining ingredients.
- Place ice cubes in a stainless steel pan and place saucepan on ice until cold.
- Transfer to icecream maker. When finished, put the gelato in an airtight container and freeze.
